Savory Garlic Chipotle Chicken

Chipotle has quicky evolved into one of my go-to seasonings. You just can’t beat that little bit of spice with a splash of smoky flavor, adding just the right amount of heat to any dish. After experimenting, I’ve learned that a little goes a long way. Chipotle is one of those spices that packs a whole lot of flavor, but don’t unerestimate the heat!

Sometimes you just have a taste for something unusual, that’s how this dish was created. I was satisfied with the taste of the Chicken but wanted to cool it down the flame for the non spicy family members. Then it hit me, I had some leftover Shrimp sauce in the fridge, it was truly the icing on the cake. It turned this Chicken dish into one of my favorite self-created recipies.

Coat fresh Chicken thighs in seasonings and sprinkle with flour. Heat Dutch oven on stovetop, add 1 tsp of garlic, saute 1minute then add chicken. Brown chicken approx 5 min each side, or until golden brown (Chicken will not be thoroughly cooked). Add additional oil, if needed. Adjust heat so chicken does not burn, cook in small batches, three to four pieces at a time. Remove chicken from pan, add onions and remaining garlic and continue to cook until onions are soft, season with a sprinkle of salt and pepper. Add chicken back to pan, toss in carrots and mushrooms., pour Shrimp sauce evenly over all of the Chicken. Cover and bake 45 minutes in oven preheated to 375.

Serve over rice, mashed potatoes or cous cous. Top with chopped Parsley.

Ingredients
6-10 Chicken Thighs (with skin)
1/4 cup flour
3 large Carrots cut in thin angled slices
1 1/2 large Onions sliced
1 Tablespoon Garlic minced
1 pint sliced Mushrooms
2 tsp salt
2 tsp pepper
2 teaspoons Smoked Chipotle
1 tsp Thyme
1 cup Shrimp sauce
*additional salt and pepper to taste
