Spicy stir-fry Cabbage

1 head of cabbage sliced thin

1 onion, thinly sliced

2 tsp chopped garlic

2 Tbsp vegetable oil

1 stick butter

1-2 tsp salt

1 tsp pepper

2 tsps sugar

1-3 tsps hot pepper flakes (more for really spicy, less for just a kick)

Slice cabbage into thin slices, including dark green portions (this is optional, you can discard dark green layers if you prefer). Slice medium onion in half, then into thin slices. Heat oil and butter on medium high heat, add onions and saute until onion becomes translucent, turn heat to medium (we don’t want to burn the onions or garlic). Add garlic to onions and cook for 1 minute, just until garlic becomes fragrant, sprinkle with a dash of salt and pepper.

Next add the cabbage, sprinkle with remaining salt and pepper, sugar and pepper flakes. Mix cabbage with onions and garlic, cover and cook and additional 5 minutes. Uncover, toss ingredients and re-cover for another 5 minutes.

**Adjust salt and pepper and pepper flakes to your tastes. Do not add water in order to obtain a crisp texture. Cabbage will sweat and produce some liquid, stir more often if needed to keep from browning. Enjoy!
